Ingredients
Method
Make the Dough
- Add 3 Tbsp sugar and 2½ tsp yeast to a stand mixer bowl. Pour in 1 cup warm milk and let it sit for 5-10 minutes until foamy.
- Incorporate 3½ cups bread flour, 2 large eggs, and 1 tsp kosher salt. Mix on low for 1-2 minutes.
- Gradually add ½ cup softened unsalted butter and knead on medium-high until smooth and elastic, about 10 minutes.
Let the Dough Rise
- Grease a large bowl with olive oil, transfer the dough into it and cover with a towel. Let it rise in a warm spot for 60-90 minutes or until it doubles in size.
Prepare the Pan
- Preheat the oven to 350°F (175°C) and grease a 12-inch cast-iron skillet or 9x13 baking dish.
Roll Out the Dough
- Turn the dough out onto a floured surface, cut into 16 pieces, and shape each into a ball.
- Arrange rolls in the prepared pan, cover with a towel, and let rise for another hour.
Make the Egg Wash
- Whisk together 1 egg and 1 Tbsp milk and apply to the proofed rolls.
Bake the Rolls
- Bake for 20-25 minutes until puffed and golden brown. Brush with melted butter and sprinkle with Parmesan, parsley, and flaky sea salt.
- Allow to cool slightly before serving.
Notes
Tips: Use warm milk (about 110°F) to activate yeast, measure flour properly, and warm dough if your kitchen is cold. For variations, infuse melted butter with garlic or herbs.
