Method
Cooking the chicken
- Start by placing the chicken breasts in a pot and covering them with water about an inch above the chicken. Bring to a boil, then reduce heat and simmer for 8-9 minutes. Let sit for 2 minutes after turning off the heat.
Shredding the chicken
- Once the chicken has cooled, chop or shred it as desired.
Combining ingredients
- In a mixing bowl, add the shredded chicken, hummus, hot sauce, and seasonings. Stir until well combined.
Assembling the wraps
- Lay a wrap flat and spread about 2 heaping tablespoons of the chicken salad across the center. Top with lettuce and carrots, then tightly roll the wrap.
Cutting servings
- Using a serrated knife, slice the wrap into four pieces.
Serving
- Arrange sliced roll-ups on a plate and serve with crunchy celery sticks and a veggie dip.
Notes
For extra flavor, consider marinating the chicken in olive oil, garlic, and hot sauce for a few hours. Use a variety of wraps for visual appeal or different preferences. Store in an airtight container in the refrigerator for up to 2-3 days.
