Ingredients

Dry Ingredients
  • 2 cups all-purpose flour This will form the base of your scones, lending them a light and airy texture.
  • ⅓ cup granulated sugar Adds a touch of sweetness that balances the tartness of the blueberries.
  • ½ teaspoon kosher salt Enhances the flavors of your scones.
  • ¼ teaspoon baking soda Helps with leavening, providing lift.
  • 1 tablespoon baking powder Another leavening agent for beautiful rise.
Main Ingredients
  • 4 oz unsalted butter (cold and cubed) Key to flaky layers; keep it cold for best results.
  • 1 heaping cup fresh blueberries Their juicy bursts make these scones irresistible.
  • 1 large egg Helps bind the mixture, adding richness.
  • ⅔ cup buttermilk Adds moisture and tenderness.
  • ½ teaspoon vanilla extract Complements the blueberries.
  • 1 tablespoon turbinado sugar (or white sanding sugar) For a crunchy topping.

Method

Preparation
  1. In a medium mixing bowl, combine the flour, sugar, salt, baking soda, and baking powder. Stir gently to mix well.
  2. Add the cold, cubed butter to the flour mixture. Using your fingers, work the butter into the flour until it resembles large peas.
  3. Toss in the fresh blueberries gently, being careful not to crush them.
  4. In a measuring cup, whisk together the buttermilk, egg, and vanilla extract until well combined.
  5. Make a well in the center of the flour mixture and pour in the wet ingredients, reserving about 2 tablespoons for an egg wash later.
  6. Use a spatula or wooden spoon to fold the mixture together, forming a wet dough.
  7. Turn the dough onto a well-floured surface, fold it over itself 2-3 times to lightly knead, then shape it into a circle about 1.5 inches thick.
Baking
  1. Use a sharp knife or a pizza cutter to cut the dough into 8 equal wedges.
  2. Place the scones on a lined baking sheet and either freeze or refrigerate them while the oven preheats to 400°F (200°C).
  3. Brush the tops and sides with the reserved egg wash, and sprinkle generously with turbinado sugar.
  4. Bake in the preheated oven for 23-24 minutes until golden brown and a toothpick inserted comes out clean.
  5. Allow the scones to cool completely on a wire rack before serving.
