Preparation
- Preheat the oven to 350°F (175°C) and prepare a 9x12 casserole dish by spraying it with cooking spray.
- In a low, shallow dish, combine breadcrumbs and both cheeses, mixing well.
- Melt the unsalted butter in a small pan over medium-low heat, then stir in the onion powder and garlic powder.
- Season the chicken breasts with salt and black pepper on both sides.
Coating
- Dip each chicken breast into the melted butter mixture, coating all sides.
- Press each chicken piece firmly into the breadcrumb mixture to ensure it adheres well.
Baking
- Arrange the coated chicken breasts in the prepared casserole dish, sprinkle any leftover breadcrumbs on top, and drizzle with remaining butter.
- Bake for 35-45 minutes, checking for the internal temperature to reach 165°F (74°C).
Serving
- Remove from the oven and let the chicken rest for a few minutes before serving hot.
Notes
For variation, try adding paprika or Italian herbs to the breadcrumbs. For extra crunch, sprinkle crushed cornflakes before baking.
