Ingredients

Fruit Mixture
  • 2.5 cups water
  • 1.5 cups light raisins or sultana raisins for a sweet, chewy bite
  • 2 cups dried apricots chopped into juicy morsels
  • 0.25 cups sugar to enhance sweetness
Batter Ingredients
  • 1 cup butter creamy and rich
  • 0.5 cup cream cheese offering a velvety texture
  • 1 cup sugar for the batter
  • 4 pieces eggs adding a fluffy, airy quality
  • 2.5 cups all-purpose flour for structure
  • 1 tsp baking powder to help the cake rise
  • 1 pound glace cherries chopped for a colorful, sweet surprise
  • 1 pound mixed dried fruit adding depth and flavor
  • 1.5 tsp vanilla extract aromatic and warm

Method

Preparation
  1. Combine the water, chopped dried apricots, raisins, and ¼ cup of sugar in a medium saucepan. Simmer slowly over low heat for about 30 minutes. Set aside to cool to room temperature.
  2. In a large mixing bowl, cream together the butter, cream cheese, vanilla extract, and 1 cup of sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. Sift together the all-purpose flour and baking powder in a separate bowl.
  5. Gradually fold half of the flour mixture into the creamed butter and sugar mixture.
  6. Fold in the cooled boiled apricot mixture.
  7. Incorporate the remaining dry ingredients, folding gently until just combined.
  8. Fold in the chopped glace cherries and mixed dried fruit.
Baking
  1. Preheat your oven to 325 degrees F (160 degrees C). Pour the batter into a greased and floured tube pan or divide it into two small loaf pans.
  2. Bake for about an hour, checking for doneness with a toothpick inserted into the center.
  3. Once baked, allow the cake to cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.

Notes

For added moisture, consider drizzling a simple syrup over the cooled fruitcake. You can customize the fruitcake by adding nuts like walnuts or pecans for added crunch.
