Method
Preparing the Crust
- Start by making either the homemade pie crust or all butter pie crust. Refrigerate the dough for at least two hours.
- On a floured work surface, roll out one disc of chilled dough until it reaches a circle about 12 inches in diameter.
- Carefully place the rolled dough into a 9-inch pie dish that’s 1.5 to 2 inches deep. Tuck the dough smoothly and refrigerate.
Making the Filling
- In a large bowl, mix together the apple slices, sugar, flour, lemon juice, cinnamon, allspice, and nutmeg until combined.
- Pour the apple filling into a skillet and cook over medium heat until the apples begin to soften, about 5 minutes. Let it cool slightly.
Assembling the Pie
- Preheat your oven to 400°F (204°C).
- Roll out the second disc of chilled dough into another 12-inch circle. Cut strips of dough for a lattice pattern.
- Fill the prepared pie crust with the apple mixture. Weave the strips over the filling and crimp edges to seal.
- Lightly brush the lattice top with egg wash and sprinkle with coarse sugar.
Baking the Pie
- Place the pie on the middle oven rack for 25 minutes. After 25 minutes, lower the temperature to 375°F (190°C) and bake until golden brown.
- The pie is done when the filling is bubbling through the lattice; this should take another 35-45 minutes.
- Let the pie cool on a rack for at least 3 hours before slicing.
Notes
Choose a mix of tart and sweet apples for balanced flavor. Chill ingredients for a flaky crust. Sautéing apples before baking is recommended.
