Method

Preparation
  1. In a large pot, heat the extra virgin olive oil over medium-low heat.
  2. Add the diced onion and minced garlic. Cook until the onions are translucent, approximately 5 minutes.
  3. Stir in the diced celery and carrots. Cook for an additional 3-5 minutes.
  4. Pour in the vegetable or chicken broth and bring it to a boil over high heat.
  5. Rinse and drain the white beans, then stir them into the broth mixture. Reduce the heat to a simmer and cook until the carrots and celery are tender.
Finalizing the Soup
  1. Using an immersion blender, wooden spoon, or potato masher, mash some of the beans to thicken the soup.
  2. Toss in the chopped kale, adjusting seasoning with kosher salt and freshly ground black pepper to taste. Let it simmer for about 5 minutes.
  3. Finally, stir in the baby spinach and about a tablespoon of the chopped parsley.
  4. Serve immediately with a drizzle of olive oil, leftover parsley, or croutons.

Notes

For an even heartier soup, consider adding diced potatoes. A bay leaf can enhance the flavor, and if desired, a pinch of red pepper flakes can add spice.
