Ingredients

Main Ingredients
  • 14-16 ounces firm, extra firm, or sprouted tofu Offers a creamy texture and protein-rich base.
  • 1-2 tablespoons olive oil Adds a hint of fruity richness.
  • ½ teaspoon salt More can be added to taste.
  • ½ teaspoon pepper Freshly ground for aromatic warmth.
  • 1 teaspoon garlic powder Offers a savory depth.
  • ¼ teaspoon ground turmeric powder Adds a brilliant yellow hue.
  • ¼ teaspoon paprika or smoked paprika For a subtle smokiness.
  • 1-3 teaspoons nutritional yeast Lends a cheesy flavor.
  • pinch cayenne pepper or Aleppo chili flakes Adjust to your heat preference.
  • ¼ cup chopped green onions Adds a delightful crunch and color.

Method

Preparation
  1. Place the block of tofu on a paper towel and gently blot all sides to remove excess moisture.
  2. In a large nonstick pan or cast-iron skillet, heat the olive oil over medium heat. Sauté onions or other veggies first, if desired, until they’re tender-crisp, then set aside.
  3. Crumble the tofu into the oiled pan using your fingers and continue breaking it apart with a wooden spatula until you have small, uniform pieces.
Cooking
  1. Cook the crumbled tofu undisturbed for about 4-5 minutes.
  2. Season the tofu with salt, pepper, garlic powder, turmeric, paprika, nutritional yeast, and cayenne pepper. Stir everything together and sauté for another 3-4 minutes.
  3. For a creamier texture, add a splash of plant-based milk. If you prepared veggies, stir them back into the pan along with a handful of baby spinach.
  4. Taste the Tofu Scramble and adjust seasoning with more salt if desired, then garnish with chopped green onions and serve hot.

Notes

For added freshness, toss in fresh herbs like cilantro or parsley before serving. Feel free to experiment with diced veggies or spices like cumin and curry powder for different flavor profiles.
