Ingredients

For the Zucchini Boats
  • 4 large large zucchini Washed and sliced in half lengthwise
  • 2 Tablespoons olive oil Fragrant, adds depth of flavor
For the Filling
  • 1 small onion Diced finely
  • 2 green onions Sliced thin
  • 0.5 pound spinach Washed and chopped fine
  • 1.5 teaspoons dried dill Provides a signature herbal note
  • 2 eggs Bind the ingredients together
  • 8 ounces crumbled feta Divided for mixing and topping
  • 0.5 cup cottage cheese Balances the saltiness of the feta
  • 0.5 teaspoon Kosher salt Essential seasoning
  • 0.25 teaspoon black pepper Adds a hint of heat
  • 0.25 teaspoon ground nutmeg Rounds out the flavor profile

Method

Preparation
  1. Preheat the oven to 375 degrees F.
  2. Hollow out the zucchini halves using a melon baller or spoon, reserving the flesh for later, and place in a lightly greased 13"x9" baking pan.
Cooking the Filling
  1. In a large saucepan, heat the olive oil over medium heat. Sauté the diced onions and green onions until translucent, about 3 minutes.
  2. Chop the reserved zucchini insides and add them along with the chopped spinach. Continue cooking for about 5 minutes until spinach wilts.
  3. Drain excess liquid from the mixture and blend in the dried dill, nutmeg, salt, and pepper, then set aside to cool.
  4. In a separate bowl, beat together the eggs, cottage cheese, and 6 ounces of crumbled feta until combined.
  5. Fold the cooled spinach mixture into the cheese blend until well mixed.
Assembly and Baking
  1. Generously fill each zucchini boat with the prepared stuffing and sprinkle the remaining feta on top.
  2. Bake for 30 to 35 minutes or until zucchini is tender and feta is golden brown. Cover with foil if browning too quickly.

Notes

Add fresh herbs like parsley or oregano for more flavor. For a spicier filling, consider adding chili flakes or jalapeño. Fold in chopped walnuts or pine nuts for added crunch.
