  • to taste shredded cheddar Rich and melty.
  • 4 whole wheat tortillas or wraps Burrito-sized.
  • as needed nonstick olive oil spray For browning.

Method

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the cubed sweet potato, red pepper, red onion, and jalapenos with the olive oil. Sprinkle in the cumin, chili powder, salt, and pepper, ensuring all the veggies are coated evenly.
Roasting
  1. Spread the seasoned veggies onto a large baking dish.
  2. Roast them in the preheated oven for about 20 minutes, stirring halfway through.
  3. The sweet potatoes should become fork-tender and slightly caramelized.
Mixing
  1. Once roasted, allow the vegetable mix to cool slightly.
  2. Place the cooled veggies in a mixing bowl with the rinsed black beans, chopped cilantro, and lime juice. Combine softly to preserve the texture.
Wrapping
  1. Warm the whole wheat tortillas according to the package instructions.
  2. On each warm tortilla, add two generous heaping tablespoons of the veggie and bean mixture into the center. Top with shredded cheddar cheese.
  3. Fold the bottom over the filling, tuck in the sides, and roll it tightly until fully wrapped.
  4. Place the burrito seam-side down in a baking dish and spray or brush the top with nonstick olive oil.
Baking
  1. Bake the prepared burritos in a 375°F (190°C) oven for about 15 minutes, or until golden and crispy.
  2. For a softer burrito, wrap each burrito in aluminum foil before baking.

Notes

Experiment with different vegetables like zucchini and corn. For extra flavor, consider adding garlic powder or smoked paprika. For more spice, leave the seeds in the jalapenos or add hot sauce.
