Preparation
- Preheat your oven to 400°F (200°C). Prepare an extra-large sheet pan (15×21 inches) or two smaller sheet pans (11×17 inches).
- Peel the carrots and cut them on a diagonal into large chunks. For thick carrots, cut them into 1-inch chunks; for thinner ones, opt for 1-1/2 inch chunks.
- Remove the outer leaves from the Brussels sprouts and halve them, ensuring they are ready for roasting.
- Halve the baby red potatoes, quartering any that are especially large.
- Cut the red onion into thick, 1-inch pieces after halving it.
- Peel the sweet potatoes and cut them into large 1-1/2 inch slices or chunks.
Cooking
- Place all of the prepared vegetables onto your sheet pan. Drizzle the olive oil generously over them, ensuring even coverage.
- Sprinkle the oregano, rosemary, thyme, and basil over the veggies. Add salt and pepper to taste.
- With clean hands, toss the vegetables until they are evenly coated with the oil and seasonings. Spread them out on the pan, ensuring they aren’t overlapping.
- Place the sheet pan on the middle rack of the preheated oven and bake for 35–40 minutes, flipping halfway through.
- Once the veggies are beautifully golden-brown and tender, remove them from the oven. Taste and adjust seasoning if needed.
- Garnish with fresh herbs or grated Parmesan cheese on top, if desired.
Notes
Ensure you cut all vegetables to a similar size for even roasting. Experiment with different herbs and spices.
