Preparation
- Place a small plate in the freezer to test the jam’s consistency later.
- Thoroughly wash the peaches under cold water.
- Bring a large pot of water to a boil and prepare a bowl of ice water.
- Carefully add the peaches to the boiling water for about 30 seconds.
- Transfer the peaches to the ice bath to stop the cooking process.
- Once cool, peel the peaches and remove the pits, cutting them into 3/4" chunks.
Cooking
- In a medium saucepan, combine peach chunks, sugar, and lemon juice. Mash half for a chunky texture.
- Bring the mixture to a boil over medium-high heat, stirring frequently.
- Once boiling, reduce heat and cook for about 12 minutes.
- Check for doneness using a thermometer or the plate test.
Cooling and Storing
- Remove from heat and let cool completely on a wire rack for about 2 hours.
- Transfer to an airtight container and refrigerate. Can last up to 1 week.
- For longer storage, freeze the jam for up to a year.
Notes
For a smoother consistency, blend peach chunks; adjust sweetness to taste; add spices like cinnamon for a twist.
