  • 2 tsp pure vanilla extract For an aromatic touch

Method

Preparation
  1. Preheat your oven to 300 degrees F.
  2. Grease a 9-inch springform pan and line it with parchment paper, or use two loaf pans.
  3. Pulse the peaches in a food processor until they form a slightly chunky mash.
  4. In a mixing bowl, combine flour, baking powder, salt, and coconut (if using). Whisk together.
Mixing
  1. Cream together the butter and sugar until light and fluffy, about 3-5 minutes.
  2. Add eggs one at a time, beating well after each addition.
  3. Gradually add the flour mixture to the wet ingredients in three portions, alternating with the mashed peaches.
  4. Gently fold in the dried and/or candied fruit until just combined.
Baking and Cooling
  1. Spread the batter evenly into the prepared pan.
  2. Bake for about 2 1/2 hours or until a toothpick comes out clean.
  3. Let the cake cool on a wire rack for 15-20 minutes, then remove from the pan and cool completely.
Finishing Touches
  1. Optional: Poke small holes in the cake and pour 4 ounces of brandy, cognac, or whiskey over it.
  2. Wrap the cooled cake in cheesecloth soaked in brandy for enhanced flavor.
  3. Serve with marzipan or fresh fruit and nuts, and possibly a glaze made from boiled water and sugar.

Notes
