Preparation
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Use a fork to blend until the crumbs are evenly moistened. Set aside 2 tablespoons of the crumbs to sprinkle on top.
- Press the crumb mixture firmly into the bottom of a 9x9-inch pan that has been lightly sprayed with non-stick cooking spray.
Mixing the Filling
- In a separate bowl, cream the softened cream cheese, confectioners' sugar, and almond extract together until smooth.
- In another large bowl, whip the whipping cream with the granulated sugar and vanilla extract until stiff peaks form.
- Gently fold the whipped cream mixture into the cream cheese mixture by hand.
Assembly
- Spread a little less than half of the cream cheese and whipped cream mixture evenly over the crust.
- Spoon the cherry pie filling over the cream layer and spread it out evenly.
- Top the cherries with the remaining cream cheese and whipped cream mixture.
- Sprinkle the reserved graham cracker crumbs over the top.
Chilling
- Cover the pan and refrigerate for at least 4 hours, ideally overnight.
Notes
For a thicker dessert, consider doubling the recipe in a larger pan. Prepare the crust a day in advance to cut down prep time. Experiment with different fruit fillings for variety.
