Preparation
- Heat one tablespoon of olive oil in a large cooking pot. Add the chopped mushrooms and sauté for 7-8 minutes until they are cooked and browned. Transfer the mushrooms to a bowl and set them aside.
- In the same pot, heat an additional ½ tablespoon of olive oil. Add the finely chopped onion and cook until it becomes translucent.
- Stir in the chopped celery, carrot, and minced garlic. Sauté for about 2-3 minutes, letting the flavors meld.
- Toss in chili flakes, dried oregano, basil, cumin powder, black pepper, and bay leaves. Sauté for a few seconds.
- Add the pearl barley to the pot and sauté for about a minute.
- Pour in 7 cups of vegetable stock and season with salt. Cover and let cook on medium heat for 35-40 minutes.
- Once the barley is cooked, add the sautéed mushrooms and halved cherry tomatoes. Cook uncovered for an additional 6-7 minutes.
- Stir in the lemon juice and chopped parsley or cilantro before removing the bay leaves.
Notes
For extra flavor depth, add soy sauce or tamari. For creaminess, blend a portion of the soup and mix back in. Serve with crusty bread or salad.
