  • 1/8 teaspoon red pepper flakes optional for heat
  • Salt and pepper to taste
Finishing Touches
  • 1/2 cup diced zucchini for tender bites
  • 2 bay leaves optional for aroma

Method

Sauté the Vegetables
  1. Add olive oil to a large pot over medium heat.
  2. Toss in the diced onion, carrots, and celery. Sauté for 8–10 minutes until the onion becomes golden and soft.
  3. Add the minced garlic and cook for an additional 30 seconds until fragrant.
Incorporate Tomato Paste
  1. Stir in the tomato paste, seasoning the mixture with salt and pepper.
  2. Cook for about 8 minutes, stirring frequently.
Add Tomatoes and Seasonings
  1. Pour in the fire-roasted diced tomatoes along with the dried herbs: rosemary, oregano, thyme, and, if desired, red pepper flakes.
  2. Cook for another 2 minutes while scraping the bottom of the pot.
Simmer the Broth
  1. Add the vegetable stock, drained beans, and diced zucchini to the pot.
  2. Stir well and bring to a boil, then reduce to a simmer for about 10–15 minutes.
Prepare the Pasta
  1. Boil a separate pot of water and salt it generously.
  2. Cook the ditalini pasta according to the package directions, then drain and set aside.
Final Touches
  1. When the soup is ready, turn off the heat and stir in frozen peas and corn.
  2. Taste the soup, adjusting seasonings as necessary.
  3. Remove bay leaves if used and serve.
Serve and Enjoy
  1. Ladle the soup into bowls and incorporate a few spoonfuls of pasta into each serving.
  2. Top with freshly grated Parmesan cheese and serve with crusty bread.

Notes

Consider sautéing vegetables longer for deeper flavors. If you want a creamier soup, add a splash of coconut milk. Fresh herbs like basil or parsley can enhance the finish.
