Ingredients

For the main dish
  • 2 tablespoons olive oil A luscious base that adds richness.
  • 3 medium green peppers Chopped Turkish peppers or any sweet green pepper for a crisp, refreshing bite.
  • 4 large tomatoes About 1 cup, peeled and diced; these juicy gems will impart a vibrant color and tangy flavor.
  • 0.5 teaspoon salt Essential for enhancing the natural flavors.
  • 0.5 teaspoon paprika For a mild smoky depth.
  • 4 medium eggs Creamy and protein-packed, forming the heart of the dish.
  • 0.5 teaspoon black pepper Adds an aromatic warmth.
  • 0.5 teaspoon red pepper flakes A hint of spice to awaken the palate.
  • 1 tablespoon parsley Finely chopped for garnish, bringing a pop of freshness.

Method

Preparation
  1. Begin by heating 2 tablespoons of olive oil in a pan over medium heat.
  2. Add the chopped green peppers to the pan. Cook for 2-3 minutes until they soften.
  3. Stir in the diced tomatoes, season with ½ teaspoon salt and ½ teaspoon paprika, and cook over medium-low heat until the tomatoes are tender.
  4. In a bowl, gently beat the 4 large eggs. Pour the beaten eggs over the tomato mixture in the pan.
  5. Gently stir the mixture with a spatula, ensuring the eggs spread throughout. Cook uncovered for no longer than 5 minutes.
  6. Remove the pan from heat. Garnish with black pepper, red pepper flakes, and chopped parsley.
  7. For extra flair, make small wells within the mixture and crack the eggs directly into each hollow, simmer uncovered for 8-10 minutes until the egg whites are set.

Notes

Consider adding feta cheese for a tangy twist or diced onions for sweetness. Serve with fresh bread or pita for a more substantial meal.
