Ingredients

For the crust
  • 3 cups 3 cups crispy rice cereal
  • 2 tbsp 2 tbsp agave or maple syrup
  • 2 tbsp 2 tbsp coconut oil, melted
  • 1/4 cup 1/4 cup Crunchy SunButter
  • 1/2 tsp 1/2 tsp vanilla extract
  • 1/4 tsp 1/4 tsp salt
For the lemon filling
  • 1 1/2 cups 1 1/2 cups raw cashews, soaked for at least 3 hours
  • 1/3 cup 1/3 cup full-fat coconut milk
  • 1/3 cup 1/3 cup agave or maple syrup
  • 2 tbsp 2 tbsp coconut oil
  • 1/3 cup 1/3 cup lemon juice
  • 1 tbsp 1 tbsp lemon zest
  • 1 tsp 1 teaspoon arrowroot or tapioca starch
For the blueberry jam topping
  • 1 cup 1 cup frozen blueberries
  • 1 tbsp 1 tbsp agave or maple syrup

Method

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, process the crispy rice cereal until it forms fine crumbs.
  3. Add the agave or maple syrup, melted coconut oil, Crunchy SunButter, vanilla extract, and salt to the processor. Blend until the mixture achieves a moist, sandy texture.
  4. Lightly grease 4-5 mini tart pans with coconut oil. Press the crust mixture firmly into the bottom and up the sides of each pan to form a stable crust.
  5. Place your prepared tart pans on a baking sheet and bake in the preheated oven for 12-14 minutes, or until they turn golden. Remove from the oven and let cool.
Filling and Topping
  1. Drain and rinse the soaked raw cashews, then blend them with full-fat coconut milk, agave or maple syrup, melted coconut oil, lemon juice, lemon zest, and arrowroot starch until very smooth and creamy.
  2. Pour the creamy lemon filling into the cooled tart crusts, smoothing it out evenly.
  3. In a small saucepan, combine frozen blueberries and agave or maple syrup over medium heat. Cook for about 4-5 minutes, stirring continuously, until the blueberries soften and the mixture begins to thicken into a jam-like consistency.
  4. Transfer the blueberry mixture into a jar and allow it to cool for 10-15 minutes. Once cooled, dollop small spoonfuls onto the lemon filling in the tarts, then use a chopstick to gently swirl the blueberry over the filling.
  5. Refrigerate the tarts overnight to set properly. Enjoy!

Notes

To enhance the flavor, consider adding a splash of almond extract to the filling or mixing in finely chopped nuts for added crunch.
