Ingredients

Dough Ingredients
  • 1 cup all-purpose flour
  • 1 cup low/non-fat Greek yogurt
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 small jalapeno peppers, deseeded if preferred Diced one and sliced the other for toppings.
  • 1/2 cup shredded cheddar cheese Plus more for topping.
  • 1 large egg, whisked For brushing on bagels.

Method

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Prepare the jalapenos by dicing one into small pieces and cutting the other into thin rounds. Set them aside for later.
  3. In a mixing bowl, combine the flour, baking powder, and salt. Whisk together to ensure even distribution of the dry ingredients.
  4. Add the Greek yogurt into the bowl and gently mix with a rubber spatula until a cohesive dough forms.
  5. Use your hands to knead the dough, incorporating the diced jalapeno and shredded cheddar cheese until evenly mixed.
  6. Transfer the dough to a lightly floured surface and knead for a few minutes, adding more flour if it’s still too sticky.
Shaping
  1. Divide the dough into four equal parts for smaller bagels or in half for larger ones.
  2. Roll each piece into a 6-inch long strand and pinch the ends together to shape the bagels.
  3. Place the formed bagels on a parchment-lined baking sheet.
  4. Brush each bagel lightly with the whisked egg.
  5. Top each bagel with 2-3 slices of the reserved jalapeno rounds and a sprinkle of extra shredded cheese. Optionally, add a pinch of flaky salt.
Baking
  1. Bake the bagels for about 18-22 minutes or until the tops are nicely brown.
  2. Allow them to cool for 5-10 minutes before slicing.
  3. Before serving, slice each bagel in half and toast for about 2 minutes for crispiness.

Notes

For a milder version, omit the diced jalapeno and keep only the sliced toppings. Experiment with spices like garlic or onion powder, and let the dough rest for better texture.
