Method

Preparation
  1. Add the olive or avocado oil into a large soup pot over medium-high heat.
  2. Add in the diced onion and celery and sauté, stirring frequently, until the onion is tender and translucent, about 3-5 minutes.
  3. Once the onion is ready, add the minced garlic and sauté for another minute until it turns golden and fragrant.
  4. Pour the chicken stock into the pot and bring it to a quick boil.
Cooking
  1. Once boiling, reduce the heat to a simmer and add the chicken breasts, frozen mixed vegetables, chopped cabbage, canned diced tomatoes, Italian seasoning, salt, and pepper.
  2. Let the mixture simmer gently for about 20 minutes, or until the chicken is cooked through and tender.
  3. Carefully remove the chicken from the pot, shred or chop it into bite-sized pieces, and return it to the soup.
  4. Stir well to combine all the flavors and adjust seasoning with additional salt or pepper if necessary.
Serving
  1. Ladle the soup into bowls and garnish with fresh chopped parsley if desired.
  2. Enjoy this healthy and hearty dish hot!

Notes

For a richer flavor, simmer the soup longer before serving. A squeeze of lemon juice enhances brightness. For quicker prep, use rotisserie chicken instead of raw chicken. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
