Method

Preparation
  1. Heat the olive oil in a large Dutch oven or pot over medium heat.
  2. Add the boneless, skinless chicken breasts and season with salt and pepper. Sear for 2-3 minutes on each side until lightly browned. Remove from the pot and set aside.
  3. Add the chopped celery, carrots, and diced onion to the pot. Sauté for about 3-4 minutes until fragrant.
  4. Return the chicken to the pot and add rosemary, thyme, garlic, ginger, lemon juice, lemon zest, turmeric, and additional salt and pepper. Cook for another minute.
  5. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  6. In the last 10 minutes, add the mini pasta shells and cook until tender.
  7. Remove the chicken, shred it using two forks, and return to the pot along with the parsley. Stir and serve warm.

Notes

For extra depth of flavor, consider roasting the chicken breasts before adding them to the soup. If you prefer a thicker soup, you can add a cornstarch slurry in the last few minutes of cooking.
