Method

Preparation of Crust
  1. In a large bowl, sift together the flour and salt.
  2. Cut in the cold butter and shortening until the mixture resembles large crumbs.
  3. Gradually add the cold water, stirring until a dough begins to form.
  4. Turn the dough out onto a work surface and knead it gently until you have a soft, uniform ball.
  5. Cut the dough into eight equal-sized pieces and roll each into a ball.
  6. Flatten each dough ball into a disc, cover and refrigerate for about 30 minutes.
Preparation of Peach Filling
  1. In a large saucepan, combine the frozen peaches, granulated sugar, and brown sugar.
  2. Bring the mixture to a simmer over medium heat, allowing the peaches to soften.
  3. Mash some of the peach mixture while leaving some chunks for texture.
  4. Stir in the butter and lemon juice, then add cornstarch if the mixture needs thickening. Let the filling cool completely.
Assembly and Cooking
  1. In a separate bowl, mix the powdered sugar and milk until smooth. Add salt and vanilla extract.
  2. Roll out one dough ball to about 5-6 inches in diameter, place 2 tablespoons of peach filling in the center.
  3. Fold the dough over the filling and seal the edges firmly.
  4. Heat oil in a deep fryer to 350°F. Carefully place 2-3 pies in the oil, frying for about 3-4 minutes until golden.
  5. Drain excess oil on a cooling rack and brush with glaze.
  6. Serve warm or at room temperature.

Notes

Using fresh peaches is an option. For a healthier option, consider baking them instead of frying.
