Ingredients

Main Ingredients
  • 3 tablespoons butter (or substitute with olive oil for a lighter option)
  • 4 medium boneless, skinless chicken breasts for tenderness
  • 1 medium yellow onion diced or sliced for sweetness
  • 3/4 teaspoon kosher salt to enhance the flavors
  • 1/2 teaspoon black pepper for a hint of heat
  • 1 teaspoon garlic powder for aromatic depth
  • 1/2 teaspoon dried thyme to invoke a fragrant herbaceous note
  • 2 ounces French Onion Soup Mix or use 2 tablespoons of your own all-natural blend
  • 1 cup beef broth for a savory base
  • 3/4 cup gruyere cheese grated for that creamy melt
  • to taste Fresh thyme for optional garnish

Method

Cooking Steps
  1. In a skillet, add 2 tablespoons of butter over medium heat. Once melted, add the chicken breasts and sear for 3-4 minutes per side until browned.
  2. Remove the seared chicken and set aside. Add the remaining tablespoon of butter to the skillet, then toss in the chopped onions and cook, stirring occasionally, until soft and caramelized (about 5-7 minutes).
  3. Add kosher salt, black pepper, garlic powder, dried thyme, onion soup mix, and beef broth to the onions. Stir everything together over low heat until well combined and simmer for a couple of minutes.
  4. Return the chicken to the skillet, ensuring it's submerged in the sauce. Bring to a gentle boil, cover, reduce heat, and let simmer for about 12 minutes.
  5. Uncover and sprinkle grated gruyere cheese over the chicken. Cover again and cook for an additional 3-5 minutes until the cheese is melted and bubbly.
  6. Serve hot, garnished with fresh thyme if desired, paired over rice or mashed potatoes.

Notes

For extra flavor, add Worcestershire sauce while simmering. Feel free to customize cheese or substitute chicken thighs.
