Method
Preparation
- Crack the eggs into a mixing bowl.
- Using a fork or whisk, vigorously whip the eggs until the yolks and whites are fully combined.
- Add the milk, salt, and pepper to the egg mixture and stir until blended.
Cooking
- Place a frying pan on low-medium heat and add the butter to prevent browning.
- Once the butter melts and bubbles, swirl it around to coat the pan.
- Pour the egg mixture into the pan. Let cook for 2-3 minutes until edges start to set.
- Gently push the cooked edges towards the center, allowing uncooked eggs to flow to the edges.
- Continue cooking slowly, pushing the eggs towards the middle until they look fluffy and mostly cooked.
- Turn off the heat once the eggs look fluffy and light.
Serving
- Garnish with a sprinkle of salt, pepper, and perhaps fresh chives or parsley. Serve hot.
Notes
Use fresh eggs for the best texture and flavor. Cook on low heat to ensure eggs remain tender. Don't overcook as they should remain slightly creamy.
