Preparation
- Soak the cauliflower florets in water for 15 minutes. Clean thoroughly, then cut into bite-size pieces, rinse, and drain.
- Rinse fresh herbs of your choice and place them at the bottom of a 2-quart canning or pickling jar.
- Pack the drained cauliflower florets tightly into the jar, allowing them to fit snugly without being crushed.
Pickling Brine
- In a saucepan, combine water, salt, sugar, and white vinegar. Add garlic, peppercorns, coriander seeds, bay leaves, and allspice berries.
- Bring the mixture to a boil over medium heat, stirring until salt and sugar dissolve. Once boiling, turn off the heat.
Final Steps
- Carefully pour the hot brine into the prepared jar over the packed cauliflower.
- Seal the jar tightly with a lid and refrigerate. For the best flavor, let the pickled cauliflower sit for at least one week.
Notes
Feel free to experiment with different herbs and spices based on what you have. For added heat, consider including crushed red pepper flakes or slices of jalapeno. To ensure crispy cauliflower, avoid overpacking the jar.
