For the Garnish
  • 2 balls fresh burrata cheese (4 oz each) Adds luxury and pairs beautifully.
  • 1/2 cup fresh basil leaves, sliced or torn Provides a fragrant pop.

Method

Preparation
  1. In a large pot, bring salted water to a boil for the gnocchi.
  2. Heat olive oil in a large skillet over medium-low heat and sauté garlic until fragrant, about 2 minutes.
Cooking the Sauce
  1. Increase the skillet's heat to medium and add cherry tomatoes. Cook while stirring until most tomatoes break down, about 10 to 12 minutes.
  2. Season with red pepper flakes, kosher salt, and cracked black pepper, and stir to combine.
  3. Reduce heat to medium-low and gently stir in the heavy cream.
Cooking Gnocchi & Combining
  1. Cook gnocchi according to package instructions in the boiling water. Reserve 1/2 cup of pasta cooking water before draining.
  2. Transfer cooked gnocchi to the skillet with the tomato sauce, add reserved pasta water, and toss until the sauce thickens and becomes glossy, about 2 minutes.
Finishing Touches
  1. Stir in sliced basil leaves, reserving some for garnish.
  2. Break the burrata into pieces and gently disperse over the pasta. Remove the skillet from heat.
  3. Garnish with reserved basil and serve immediately.

Notes

To prevent gnocchi from overcooking, they should float to the top of the water when done. You can substitute gnocchi with other small pasta if needed. Adding spinach or kale can increase nutrition and color.
