Ingredients

For the Sauce
  • ½ cup water
  • ½ cup fresh orange juice (from two oranges) Freshly squeezed preferred for best flavor.
  • ¾ cup sugar Plus 2 tablespoons for sweetness adjustment.
  • 1 bag fresh or frozen cranberries (12 oz) Do not use dried cranberries.
  • 1 teaspoon zest of one orange About 2 teaspoons of zest.
  • 1 pinch salt

Method

Preparation
  1. In a medium saucepan over high heat, bring the water, orange juice, and sugar to a boil, stirring occasionally until the sugar dissolves.
  2. Once boiling, add the cranberries, orange zest, and a pinch of salt to the saucepan. Allow the mixture to return to a boil.
  3. Reduce the heat to medium and let it boil gently for 10 to 12 minutes, noticing the cranberries bursting open.
  4. After simmering, transfer the sauce to a serving bowl. Cover and chill in the refrigerator until ready to serve.

Notes

This sauce can be stored in the refrigerator for up to 10 days or frozen for up to two months. Thaw overnight in the refrigerator before serving. For a spicier flavor, add a pinch of cinnamon or ginger while the sauce simmers. Chopped nuts can be mixed in post-cooking for texture.
