Ingredients

Dry Ingredients
  • 1 ⅔ cups all-purpose flour Creamy and soft, this forms the cake's foundation.
  • 1 pinch salt Enhances the sweetness and balances the flavors beautifully.
  • 1 ½ teaspoons baking powder Helps the cake rise, giving it that perfectly fluffy texture.
Wet Ingredients
  • 1 cup turbinado sugar This natural brown sugar adds a hint of caramel flavor and a delightful crunch.
  • ¾ cup + 1 Tablespoon unsalted butter, softened This creamy ingredient adds richness and moisture, ensuring a tender cake.
  • 1 teaspoon vanilla extract The aromatic essence that infuses warmth and nostalgia into the cake.
  • 4 large eggs A key component for structure and richness.
  • 1 cup mini chocolate chips These small, sweet morsels provide bursts of chocolate.

Method

Preparation
  1. Preheat the oven to 350°F (180°C) and grease a 9×5-inch (23×13 cm) loaf pan.
  2. Sift the flour into a large bowl and stir in a pinch of salt and baking powder.
  3. In a separate bowl, whisk together the turbinado sugar and softened butter until light and fluffy, about one minute.
  4. Add eggs one at a time, whisking thoroughly after each addition, then stir in the vanilla extract.
  5. Fold the dry mixture into the wet mixture in two batches, stirring thoroughly after each addition.
  6. Incorporate the mini chocolate chips evenly into the batter.
Baking
  1. Pour the batter into the prepared loaf pan and bake for approximately 50 minutes.
  2. Check for doneness by inserting a toothpick into the center; it should come out clean.
  3. Transfer the cake to a wire rack to cool completely before slicing.

Notes

Use room temperature ingredients for easier incorporation. Don't over mix to keep the cake light and airy. Consider adding spices for extra flavor.
