Method

Preparation
  1. Preheat your oven to 325° F (160° C). Bring a kettle of water to a boil.
  2. In a mixing bowl, whisk together condensed milk, eggs, salt, cinnamon, and vanilla extract until well blended. Set aside.
  3. Butter the bottoms of each ramekin with the unsalted butter. Divide the butter into three equal pats, placing one in each ramekin.
  4. Sprinkle 1/2 teaspoon of sugar into each ramekin.
  5. Arrange the sliced bananas over the sugar and add a layer of diced cinnamon bread.
  6. Pour some custard mixture over the bread, allowing it to soak. Repeat the layering and press down gently.
  7. Sprinkle any remaining sugar on top.
Baking
  1. Cover each ramekin with foil and place them in a baking dish. Pour boiling water into the baking dish until it reaches halfway up the sides of the ramekins.
  2. Bake for 30 minutes covered, then remove the foil and bake for another 30 minutes.
  3. The pudding is done when it puffs up and a toothpick comes out clean when inserted in the center.
Serving
  1. Serve warm, drizzled with caramel sauce, and optionally topped with a scoop of vanilla ice cream.

Notes

Use very ripe bananas for maximum sweetness. Consider adding chopped nuts for extra flavor. Experiment with different types of bread and soak longer for a softer texture.
